What's the deal with Iron Chef America (or the original for that matter)? How does it work? Please see below?
1. How much time elapses between the moment the chefs learn the secret ingredient and when the clock starts? Are we supposed to believe that they formulate their plans and gather the other ingredients in a couple minutes?
2. The other night one chef was cooking rabbits! Rabbits just happened to be in the fridge that night? How convenient...
3. How does it work?
In general, a few days ahead of filming, the competing chefs are given a list of 3-5 items that *could* be the secret ingredient, and told that one of them will be. They're also told what ingredients are normally provided in "Kitchen Stadium," and asked what extra ingredients or equipment they would like on-hand for each of the possible secret ingredients. The production company then prepares the kitchens (including equipment, refrigerators, freezers, and pantries) for the real secret ingredient, but keeps any give-away items (like specialty kitchen equipment) hidden until "the big reveal."
Once the chefs know, they quickly stop to get anything ready that needs to be ready, and then the clock starts and the one-hour battle is filmed non-stop. Judging takes a long time because they have to film the beauty shots of each plate and then serve them all, but the cooking battle itself takes place in one hour, and the ingredient is not revealed very long before that starts. A few minutes, maybe 10-15 from what I've read, but not much more delay between the unveiling and the beginning of the battle.
So, yes, they have an idea what might be coming up and have told the production what they'd want in each of several cases. They have a game-plan coming in, and they generally just execute it. But they do not know until a few minutes before the clock starts what the secret ingredient really is, and they don't get to see it until then.
If it's "cheese," they may not find the kind of cheese they wanted for their dishes. "Steak" might be kobe beef instead of normal angus beef, which calls for different preparations to take full advantage of its flavor, and so on. In a battle about "eggs," there may be chicken eggs, quail eggs, and even ostrich eggs, and they'll do better if they use all the kinds of eggs, so if they didn't anticipate that they'll have to change the menu on the fly.
It's not impossibly difficult, but it sure ain't a walk in the park.
